[00:20]	IsambardPrince	I ended up making a lot of changes to this recipe.
[00:21]	IsambardPrince	The recipe called for one red bell pepper and a large onion, both sauteed. I used a red and yellow bell pepper and half as much onion, chopped the rest of the onion up and froze it to use later. I like more color and a larger ratio of bell pepper to onion in a fajita mix.
[00:22]	IsambardPrince	The recipe leans heavily on one packet of taco seasoning in two pounds of ground beef, which is not really enough seasoning.
[00:22]	IsambardPrince	So when sauteeing the vegetables in olive oil, I used a tsp of seasoning salt in there.
[00:24]	IsambardPrince	For the top layers, I used double the sour cream and double the mayo (Duke's mayo), and doubled the onion powder from 1 Tbsp to 2 Tbsp, and doubled the cheese that mixed into that from 1 cup to 2, all cheddar no mozzarella. Mozzarella is a chewy Italian pizza cheese that doesn't belong in a John Wayne anything. 
[00:24]	IsambardPrince	Then I sprinkled another 1 cup of chedder on top before putting it in.
[00:26]	IsambardPrince	I used twice as many biscuits on the bottom layer because I don't like the biscuit layer spread too thin. It just said grands biscuits, but I used buttermilk grands because those are the best when you're just making biscuits.
[00:27]	IsambardPrince	I pressed most of the moisture out of the drained 14.5 ounce can of Rotel tomatoes+chiles with a paper towel and used frozen yellow and white corn instead of canned corn to solve a "soggy biscuit" problem people were complaining about in the comments.
[00:29]	IsambardPrince	The point of cooking is to make something worth eating. The recipe is mostly good here but some of the instructions were vague or not ideal or in the case of the Mozzarella, just plain wrong.
[00:33]	IsambardPrince	If it's still not quite right I do have some hot chunky salsa that I stocked up on for $1 a jar at Target on clearance.
[00:43]	IsambardPrince	The only thing I actually use green bell peppers in, is red beans and rice. It does belong in cajun/creole recipes.
[00:43]	IsambardPrince	They just won't taste quite right if you spend more money on yellow, orange, or red, which are usually better peppers that command a higher price.
